Cải thảo chọn cải tươi không vị sâu, rửa sạch, để ráo nước. Sau đó, chẻ bắp cải thảo làm tư rồi cắt thành các khúc ngắn khoảng 3cm. Cho cải đã cắt vào tô lớn, rắc muối vào, bóp cho cải hơi dịu rồi thêm nước vào cải, đặt 1 đĩa nặng đè xuống cải trong tô, để yên 1-2 tiếng đồng hồ. Sau đó sả sạch nhiều lần với nước sạch rồi để ráo nước.
Trong chén nhỏ, trộn đều gừng, tỏi băm với 3 muỗng canh nước, 5 muỗng canh ớt bột hàn quốc, trộn đều.
Cho cải thảo ra tô, thêm chén sốt vừa pha vào dùng tay trộn cho áo đều quanh cải thảo.
Xếp cải thảo đã trộn vào hũ thủy tinh đã làm sạch, đậy kín nắp, để nhiệt độ phòng 5 ngày.
Kiểm tra hằng ngày. Dùng tay ấn kim chi xuống để giải phóng các bọt khí. Khi thấy kim chi ăn được là có thể dùng. Khi dùng không hết thì có thể bảo quản trong tủ lạnh để dùng dần được lâu dài.
